This instructional booklet on painting horse (and the expanded horse lesson contained in Ning Yeh's Blue Album) are the most helpful horse painting instructions I have encountered. His guide to proportion and anatomy of the animal are insightful; his explanations for using lines and shading to convey the spirit of the horse are effective. This lesson is a great starting point for developing your own poses and compositions of this mighty animal.
